Noni's Blueberry Muffins

• Ingredients
• 2 eggs
• unsalted butter
• milk
• vanilla extract
• flour
• sugar
• baking powder
• salt
• blueberries
• Recipe
• Grease a muffin pan, including top (don't use paper muffin cups). Combine in a standing mixer bowl:
• 2 eggs
• ¹/₂ cup unsalted butter (113g), warmed
• ¹/₂ cup milk (120g), whole
• 1 tsp vanilla extract
• Mix at medium speed until well combined. Mixture will look curdled. In a separate bowl, whisk together:
• 2 cups flour (256g)
• ²/₃ cup sugar (140g)
• 2 tsps baking powder (10g)
• ¹/₂ tsp salt
• Add dry to wet ingredients, in 3-4 batches, and mix at low speed, as little as possible until combined into a batter.
• Gently fold in:
• 2 cups blueberries (320g), rinsed and dried
• Spoon batter into muffin cups (they will be quite full). bake for 30-35 minutes, or until golden brown.
