Crepes

• Ingredients
• 2 eggs
• milk
• flour
• canola oil
• salt
• Recipe
• Combine and beat until well mixed:
• 2 eggs
• 1¹/₂ cups milk (360g)
• 1 cup flour (128g)
• 1 tbsp canola oil
• ¹/₄ tsp salt
• Let the batter rest for a few minutes.
• Cook the batter, 1/4 cup at a time, in a medium frying pan over medium high heat. Swirl to coat the entire pan. The crepe is done when the bottom is light brown, about 2 minutes.
• As the crepes finish, stack them in between paper towels to avoid sticking. Serve hot.
