Gluten-free Peanut Butter Bars

• Ingredients
• gluten-free flour
• baking powder
• baking soda
• salt
• canola oil
• creamy peanut butter
• unsalted butter
• powdered sugar
• brown sugar
• 2 eggs
• vanilla extract
• Recipe
• Whisk together:
• 2¹/₂ cups gluten-free flour (320g)
• 1¹/₄ tsps baking powder
• ¹/₂ tsp baking soda
• ¹/₄ tsp salt
• Beat on medium speed until blended and very fluffy:
• ¹/₄ cup canola oil
• ²/₃ cup creamy peanut butter (171g)
• 12 tbsps unsalted butter (169g), softened
• ¹/₃ cup powdered sugar (40g)
• 1 cup brown sugar (192g)
• Add and beat until well combined:
• 2 eggs
• 2¹/₂ tsps vanilla extract
• Gradually stir in the flour mixture, until well blended and smooth. Let the dough stand while you grease a large short-sided cookie sheet.
• Spread the batter into the baking sheet and use a fork to create a pattern on the top. Make sure to press the fork down enough to make high ridges between the tines. When the ridges are lightly browned, the cookie bars are ready! Remove to a rack and let cool until firm before cutting.
