• 4 eggs
• salt
• pepper
• gluten-free flour
• milk
• unsalted butter
• cheddar
• Recipe
• Put a large cast iron skillet in the oven while it heats.
• Whisk until lumps disappear:
• 4 eggs
• ¹/₄ tsp salt
• ¹/₈ tsp pepper, 5-6 cranks of the pepper mill
• ¹/₂ cup gluten-free flour (64g)
• Add and whisk until smooth:
• ¹/₂ cup milk (120g)
• Remove the heated pan from the oven and swirl around and up the sides:
• 2 tbsps unsalted butter (28g)
• Add the batter to the pan and bake for 12 to 13 minutes.
• With a silicone brush, spread any melted butter from the bottom of the baby up the sides. Then bake until the edges are a deep golden brown and the center is just beginning to color.
• Remove from the oven and loosen the edges from the pan. Sprinkle with:
• ¹/₂ cup cheddar (56g), grated
• Transfer to a large cutting board to slice up like a pizza, then serve.
