Pumpkin Oatmeal Cookies

• cinnamon
• nutmeg

• sunflower oil
• molasses
• pumpkin
• vanilla extract

• Recipe
• Preheat the oven. Grease 2 baking sheets, or cover with parchment paper. Then mix together:
• 2 cups flour (256g)
• 1¹/₃ cups rolled oats (108g)
• 1 tsp baking soda
• ³/₄ tsp salt
• 1 tsp cinnamon
• ¹/₂ tsp nutmeg
• In a separate (larger) bowl, mix together:
• 1¹/₃ cups sugar (280g)
• ²/₃ cup sunflower oil (149g)
• 2 tbsps molasses
• ¹/₂ cup pumpkin, pureed
• 1 tsp vanilla extract
• Add the dry ingredients to the wet ingredients in three batches, gently folding until just combined. If desired, add:
• ¹/₂ cup raisins (80g)
• or
• ¹/₂ cup chocolate chips (112g)
• ²/₃ cup sunflower oil (149g)
• Drop the dough by rounded tablespoons onto baking sheets. Because they don't spread a lot, cookies can be placed about 1-inch apart. Flatten the tops slightly with a fork. Bake for 14-16 minutes until set and golden at the edges. Remove from oven and cool completely.
