Perfect Vanilla Cupcakes

• ⁷/₈ cup flour (112g), (3/4 c. + 2 tbsp.)
• 1 tsp baking powder
• ¹/₈ tsp salt
• 4 tbsps butter (56g)
• ¹/₂ cup sugar (105g), (1/4 granulated, 1/4 turbinado sugar)
• 1 egg, at room temperature
• ¹/₂ cup milk (120g), at room temperature
• 1 tsp vanilla extract
• Line muffin pans with papers (makes 9 regular cupcakes or 27 mini cupcakes). Sift together flour, baking powder, and salt. Set aside. Cream together butter and sugar on medium speed with mixer until fluffy (about 2 minutes). Add egg and mix until well-combined. Add 1/2 of flour mixture, milk, and vanilla. Add remaining flour mixture, mixing well. Distribute in muffin pans and bake 17 minutes, or until toothpick comes out clean and edges are golden.
