Chocolate Biscotti

• cocoa powder
• sugar
• baking powder
• salt
• almonds
• 2 eggs
• butter
• vanilla extract
• Recipe
• Mix flour, cocoa, sugar, baking powder, salt, and almonds in a bowl and set aside. In a separate bowl, whisk together eggs, butter, and vanilla. Make a well in the dry ingredients and pour in egg mixture. Using a rubber spatula, mix until a rough dough forms. Knead dough a few times, adding flour sparingly as needed. Separate into 2 halves. Form 2 cigar shapes, 1" thick, 2" wide, and 12" long. Place on greased cookie sheet and lightly flatten cigars. Bake 25 minutes, reversing pan halfway through. Let cool on pan for 15 minutes. Remove to cutting board and cut bars on angle, 1/2" thick.
