Cheesy Drop Biscuits

• cheddar
• milk
• vegetable oil
• lemon juice

• Whisk together in a large bowl:
• 2 cups flour (256g)
• 2 tsps sugar (9g)
• 1 tbsp baking powder (14g)
• ¹/₄ tsp salt
• 1 cup cheddar (112g), about a handful, grated
• In another bowl or measuring cup, combine:
• 1 cup milk (240g)
• ¹/₂ cup vegetable oil (112g)
• 1 tsp lemon juice
• Add the wet ingredients to dry and stir just until moistened. Let the dough rest for a few minutes.
• Drop by large spoonfuls onto a seasoned or greased baking sheet. Use a second baking sheet under the first to prevent scorching. Bake for 18 to 20 minutes.
