Hungarian Pastry Squares

• Ingredients
• flour
• baking powder
• salt
• baking soda
• butter
• sugar
• 2 egg yolks
• vanilla extract
• raspberry jam
• chopped nuts
• 2 egg whites
• chopped nuts
• Recipe
• Combine in a large mixing bowl:
• 1¹/₂ cups flour (192g), sifted
• ¹/₂ tsp baking powder
• ¹/₈ tsp salt
• ¹/₈ tsp baking soda
• In another bowl, cream together:
• ¹/₂ cup butter (112g)
• ¹/₂ cup sugar (105g)
• Add to the creamed butter and beat until light and fluffy (reserving the whites for later):
• 2 egg yolks
• Beat in:
• 1 tsp vanilla extract
• Combine the wet and dry ingredients and add to a 9x9 inch pan. Spread with:
• ³/₄ cup raspberry jam, about 1 jar
• ¹/₂ cup chopped nuts
• 2 egg whites, beaten
• ¹/₂ cup chopped nuts
• Bake for 25-30 minutes. When cool, cut into 12-15 squares.
