Rhubarb Jam

The rhubarb I picked made 11 jars of jam, some strawberry-rhubarb and some straight rhubarb. Maybe I should get a stand at the farmer's market.

i freaking love it. is it hard to do? i think i'll have a go at jam making this weekend..i almost offered $10 for you to send me a jar, but I'll try it on my own, first :)

It's not hard - 4 cups chopped rhubarb, 1 cup water, 5 cups sugar, and a box of Sure-Jell pectin worked for me. Boil the rhubarb and water into a mush (about 2 minutes), add the pectin and return to a boil, then add the sugar and return to a rolling boil for 1 minute. Remove from heat and jar... Let me know how it turns out!
